2/3 cup mayo (we used best foods light)
1 1/2 TBSP apple cider vinegar
2 cups diced chicken (I use about 2 cans of the Costco canned chicken - unless I have some chicken in the fridge from a previous meal)
1 1/2 red or green seedless grapes cut in half (quarters if large grapes I use the red for the color)
1 1/2 cups celery finely chopped
3/4 cup Slivered almonds optional
Mix everything together in a large bowl, using two large spoons to toss and mix well. Cover and refrigerate - serve cold on croissants. Good for up to a week.
