Set your oven to 400 degrees (if you need it done faster, you may set it to broil - but stay close to the oven and check it often to avoid burning the food)
Coat a cookie sheet with olive oil. Spread your green vegetables on the cookie sheet. Sprinkle the veggies with olive oil, salt and pepper. Place in the oven until they start to look crisp and some of the smaller ones are starting to brown. If doing on 400 degrees, I start to check after 10 minutes of cooking time - it can take up to 20 minutes or so depending on what you are cooking. If you are broiling - this can take less than 5 minutes.
Serve immediately - these don't rewarm well - but they are SO GOOD.
