This is a new recipe - we will see how the family likes it.
6 med onions, thinly sliced (4 cups)
2 tablespoons olive or vegetable oil
2 tablespoons butter
1 16oz pkg fettuccine
1/2 pound bacon
1 1/2 cups heavy whipping cream
2 cups shredded cheddar cheese (8 oz)
Place onions, oil and butter in a 3 qt microwavable dish. Microwave uncovered on Med-High for 20-30 min, stirring occasionally, until onions are golden brown - drain onions (I think you could do this just fine on the stove too - this is just what the directions say to do)
Meanwhile, cook and drain fettuccine as directed on pkg. Cook bacon in skillet over low heat, until crisp - drain on paper towels. Chop bacon into small pieces.
Heat whipping cream to boiling. Mix in 1 cup of the cheese and all of the onions. Pour over fettuccine, toss to coat. Top with remaining 1 cup cheese, sprinkle with bacon. Makes 8 servings.
