One of the things I miss from Oregon is the sandwiches at one particular restaurant - Philadelphia's. http://www.phillypdx.com/ Probably the best cheese steak sandwich around - the Portland area anyway.
If anyone in the Nashville area knows of a GREAT Cheese Steak shop - Please let me know.
Here is a recipe I found and we tried. Bill really liked it - and so did the kids - unfortunately - I was trying to duplicate the sandwiches I remember and it fell short for me. But that doesn't mean you won't like it.
freshItalian rolls or kaiser rolls, split in half crosswise
1/2lbrib eye steaks, very very thinly sliced (you can buy presliced sandwich meat in the beef section of the meat department - already packaged and ready to cook - Huge time saver for me and it wasn't that much more than buying the steak itself)
1(4 ounce)thinly sliced or provolone cheese or melted Cheese Whiz (this is a personal choice - I prefer the provolone - others may like pepper jack or swiss)
olive oil for cooking
1Heat a cast-iron skillet or griddle over medium-high heat.
2When hot add the oil, onions and bell peppers, and cook, stirring, until caramelized, about 6 minutes.
3Add the garlic, salt, and pepper, and cook, stirring, for 30 seconds.
4Push off to 1 side of the griddle.
5Add the meat to the hot pan and cook, stirring and breaking up with the back of 2 metal spatulas, until almost no longer pink, about 2 minutes.
6Mix in the sauteed vegetables.
7Top with cheese slices and melt.
8Spoon the cheesy meat mixture into the warm buns and serve immediately with condiments of choice or Put the meat in the bun and dip the spatula in the cheese whiz and then wipe the spatula down the inside of the bread.
